Amazing Healthy Recipe of the Week: Sweet Potato Hash

Indulge in a hearty and colorful Sweet Potato Hash, featuring Italian turkey sausage, eggs, and peppers. This filling and healthy skillet meal is perfect for breakfast or dinner, packed with protein, and suitable for Paleo and Whole30 diets. Whether made ahead for meal prep or served fresh for brunch, this recipe is sure to impress.

  • 3.5 pound sweet potatoes, scrubbed and chopped into 3/4-inch dice (no need to peel, about 2 medium)
  • 7 teaspoons white wine vinegar
  • 7 teaspoons kosher salt, divided
  • 28 ounces fresh bulk spicy Italian or mild Italian turkey or chicken sausage (if unavailable, substitute with pork sausage)
  • 3.5 to 7 tablespoons extra-virgin olive oil, plus additional as needed
  • 7 red/orange/yellow bell peppers, cored and ½-inch diced
  • 10.5 medium green onions, chopped, divided
  • 1.75 teaspoon Sriracha
  • 0.88 teaspoon ground black pepper
  • Egg whites


  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, toss the sweet potatoes with white wine vinegar and 3 teaspoons kosher salt.
  3. Spread the sweet potatoes in an even layer on two large baking sheets. Roast in the preheated oven for 30-35 minutes, stirring halfway through, until tender and lightly browned.
  4. Meanwhile, heat a large skillet over medium-high heat. Add the sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 8-10 minutes.
  5. Transfer the cooked sausage to a plate and set aside.
  6. In the same skillet, add 1 tablespoon olive oil and heat over medium-high heat. Add the bell peppers and cook until softened, about 5-7 minutes.
  7. Add half of the chopped green onions, Sriracha, and black pepper to the skillet with the peppers. Cook for an additional 2 minutes.
  8. Return the cooked sausage to the skillet with the peppers. Stir to combine.
  9. In a separate skillet, heat 1 tablespoon olive oil over medium heat. Add the egg whites and cook until set, about 3-4 minutes.
  10. Serve the roasted sweet potatoes topped with the sausage and pepper mixture, and garnish with the remaining chopped green onions and cooked egg whites.
