Carson’s Journey: Losing 7.9 Pounds in Just 1 Week

Meet Carson, a resilient 52-year-old lawyer from Portland, Maine. Throughout her life, Carson battled with her weight, constantly hearing a voice telling her she wasn’t good enough or skinny enough. Despite her struggles,

Carson remained active, participating in marathons and embracing her love for Zumba dancing. However, in 2016, an unfortunate accident sidelined her movements, and with the onset of COVID-19, isolation led to further weight gain.

Realizing she needed a change, Carson discovered Fitness Retreat, seeking a place to step out of her comfort zone and prioritize her health and fitness. When asked about her remarkable progress in just one week, Carson attributed it to her willingness to follow the program diligently. “I was willing to do whatever they told me. I knew I only had a short amount of time to make a change,” she shared.

Now, Carson exudes confidence and vitality. She finds inspiration in staying committed to the program, knowing that it genuinely works. With clear goals and newfound determination, Carson is empowered to achieve success.Carson's Journey

  • 3.5 pound sweet potatoes, scrubbed and chopped into 3/4-inch dice (no need to peel, about 2 medium)
  • 7 teaspoons white wine vinegar
  • 7 teaspoons kosher salt, divided
  • 28 ounces fresh bulk spicy Italian or mild Italian turkey or chicken sausage (if unavailable, substitute with pork sausage)
  • 3.5 to 7 tablespoons extra-virgin olive oil, plus additional as needed
  • 7 red/orange/yellow bell peppers, cored and ½-inch diced
  • 10.5 medium green onions, chopped, divided
  • 1.75 teaspoon Sriracha
  • 0.88 teaspoon ground black pepper
  • Egg whites

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, toss the sweet potatoes with white wine vinegar and 3 teaspoons kosher salt.
  3. Spread the sweet potatoes in an even layer on two large baking sheets. Roast in the preheated oven for 30-35 minutes, stirring halfway through, until tender and lightly browned.

  5. Transfer the cooked sausage to a plate and set aside.
  6. In the same skillet, add 1 tablespoon olive oil and heat over medium-high heat. Add the bell peppers and cook until softened, about 5-7 minutes.
  7. Add half of the chopped green onions, Sriracha, and black pepper to the skillet with the peppers. Cook for an additional 2 minutes.
  8. Return the cooked sausage to the skillet with the peppers. Stir to combine.
  9. In a separate skillet, heat 1 tablespoon olive oil over medium heat. Add the egg whites and cook until set, about 3-4 minutes.
  10. Serve the roasted sweet potatoes topped with the sausage and pepper mixture, and garnish with the remaining chopped green onions and cooked egg whites.
